Feijoada is not a quick dish, and any version that claims to be is something else wearing its name. The beans go on early, the pork goes in by cut and in order, and the pot is left alone for hours while the broth darkens and thickens.
Black beans and several cuts of pork, each added at its own moment so nothing turns to thread. The result should be thick enough to coat rice, but never a paste.
